Who we are- Giancarlo, Head Chef: Born and raised in Lima, Perú. I love the depth and variety of Peruvian cuisine. My goal is to bring this delightfully deep and rich food into the mainstream. Marleny, Pastry Chef: Born in Huánuco and raised in Lima. My outrageous sweet tooth lead me to the culinary wonders of pastry creation. My goal is to crown every great meal with a lovely, succulent dessert. We love what we do. Cooking is our expressive creation, our art, science, and passion.
What we do- We make Peruvian food with all its luscious aromas, mouth-watering flavors and textures to delight your senses. Our beautiful, delicious food arrives at your table ready to be joyfully devoured. Peruvian cuisine has been described as the epitome of fusion, a luscious mosaic of the freshest ingredients. You’ll enjoy discovering dishes with touches of Spanish, Italian, French, Arab, Chinese, Japanese, African, and other flavors.
Our training- Giancarlo Zapata, Executive Chef Born in Lima, Perú: I began my culinary career at the Lima Hotel Marriot, expanding my roles to cook, chef, kitchen supervisor, and a two-year course of study at the prestigious Le Cordon Bleu. Subsequently, I worked as Chef in Japanese, Mediterranean, Italian, and French restaurants. Marleny Chávez, Pastry Chef Born in Huánuco and raised in Lima: While working at the Hotel Gran Flamingo in Punta Cana, I discovered my talent for creating the pastries that had long been enticing my sweet tooth. In Le Cordon Bleu pastry classes, I honed those techniques into delicate, delicious desserts. We followed our passion to Sacramento when recruited to be Head Chef and Pastry Chef at the first Peruvian restaurant in the area.
And now- Our combined knowledge, talent, hard work, and tenacity have led us to open our dream, the Chicha Peruvian Kitchen & Café.
